Touch typing is typing by muscle memory, with your eyes on the screen instead of the keyboard. It is the foundation of fast, accurate typing.
Each finger is responsible for specific keys and returns to a "home" position after each press. Because the mapping is fixed, your fingers learn each key's location by feel and you no longer need to look down.
Rest your left fingers on A S D F and your right fingers on J K L ;. The raised bumps on F and J let you find the position without looking. Thumbs rest on the space bar.
Touch typists spend less mental effort on the keyboard and more on what they are writing. Speed usually follows once accuracy is consistent.
